The snark was there in S1, you're right. It was slightly more subtle, more quiet, but it was there.
And, oh, Ianto's eye rolls are LOVE, I tel you. Nothing manages to crack me up more in S2 than watching the occasional eye roll (like in Fragments, just after Jack says, "Take a deep breath" and even bruised, bloodied and battered, Ianto still rolls his eyes at that obvious statment.)
